ACOR through USAID SCHEP is supporting a project of Bayt at-Turath, the House of Heritage and Arts Society. The project aims to collect an information base about local heritage dishes from the North, Central, and South of Jordan. The names, ingredients, recipes, and associated occasions and traditions of each dish will be collected through interviews with local experts and documented. This information will be made available to the public for researchers and any who are interested in learning more about Jordan’s culinary heritage. The project also aims to revive traditional dishes that no longer exist, are rarely prepared, or are known by name only, in addition to encouraging touristic restaurants to focus on presenting these meals for visitors, whether local or foreign.
